Food

    Fettuccine

  1. Make Pasta Dough. Find recipe here: https://www.ankarsrum.com/us/recipe/pasta-dough/

  2. Then, divide pasta dough into smaller pieces.

  3. To roll out the pasta, attach the lasagna roller onto the assistant. Start with the thickest setting and run the pasta through. Then change the thickness one step at a time and run the pasta until you get the desired thickness.

  4. Attach the fettuccine cutter. Feed the pasta sheets through the fettuccine cutter. Let the fettuccine land on a generously floured surface.

  5. Boil directly or hang to dry.

  6. Cooking time about 2–3 minutes.

  7. PARMESAN

  8. Turn the Assistent on its side and assemble the grater attachment.

  9. Start the Assistent and grate the desired amount of parmesan cheese.

  10. Meatballs and tomato sauce

  11. Turn the Assistent on its side and assemble with the mincer and the hole disc of 4.5 mm.

  12. Cut the meat into thick strips or chunks and grind at medium speed. Use the plunger to push the meat through.

  13. Finish with half a raw onion, a potato or a piece of carrot to get all the meat out of the mincer (it doesn’t matter if some of it ends up in the mince).

  14. Mix together the meat, parma ham, parmesan, garlic, yellow onion and breadcrumbs until thoroughly combined.

  15. Add cream.

  16. Shape meatballs in desired size and fry in butter.

  17. For the tomato sauce: Coarsely chop the tomatoes and saute with the onions in a medium saucepan.

  18. Add water, olive oil, tomato paste, honey and the zest and juice of a lemon.

  19. Let it cook for 10 minutes and season with salt and pepper.

  20. Puree the sauce and then pour in the pan over the meatballs. Let this simmer together for a few minutes.

  21. Top with chopped basil and fresh parmesan.

  22. Serve together with the rolled fettuccine.
