- 4 egg yolks
- 45 g sugar (0.5 dl)
- 2 tsp vanilla sugar
- 300 ml milk
- 300 ml cream
- 70 g sugar (for caramel)
- A pinch of salt

Place the freezer bowl in the freezer for at least 20 hours.

Assemble the Assistent with the beater bowl and balloon whisks.

Whisk egg yolks and sugar on medium speed for a few minutes until fluffy.

In a saucepan, combine vanilla sugar, milk, and cream. Simmer for about 5 minutes.

While whisking, slowly pour the milk-cream mixture into the egg yolk mixture. Pour the mixture back into the saucepan and simmer while whisking until it reaches 84°C (180°F).

Let the mixture cool down while you make the caramel.

Melt a thin layer of sugar in a pan until completely melted. Pour the melted sugar onto a baking sheet. Repeat until all the sugar is melted. Let the melted sugar cool completely.

Mix the ice cream batter with the caramel.

Assemble the Assistent with the ice cream machine. Add the ice cream batter through the opening in the lid. Let the machine run at medium speed for 25-30 minutes. Put in the freezer for at least 6 hours. Then sprinkle with salt before serving!
